High Protein Quiche Lorraine

Ingredients:
3 cups Spinach
2 cups Mushrooms
1 Onion
2 cups Non-Fat 0% Milk
1/2 Block tofu
1 cup Non-Fat 0% Greek Yogurt
12 Eggs
1/2 cup Cheese
1/2 cup Ham
Olive Oil
Nutmeg
Salt & Pepper
Roast your veggies (Onions, Mushroom, Spinach, or any you desire) with olive oil, salt, and pepper.
Blend Tofu, Yogurt, Skim milk, Olive oil, Nutmeg, Salt&Pepper. Add to whisked eggs.
Pour blend over roasted veg, cheese, and ham.
Bake 35min at 175*
